Low GI Sour Cherry Pie

Looking for a quick blood-sugar-friendly dessert that is a real treat? This low GI sour cherry pie is the perfect answer—delicious, satisfying, and won't send your glucose on a rollercoaster.

Today my son Marcos turned 15. Unlike his brothers, he doesn't have a sweet tooth.
(He could eat a packet of feta in one sitting though—no problem. 😂)
He does like sour cherries, though, so this is what I came up with this morning:

🍒 Low GI Sour Cherry Pie 🍒

A naturally sweet-tart treat that still feels like a treat—without the sugar crash.

🥧 Ingredients

For the base:

  • 1.5 cups almond flour

  • 1.5 cups old grain flour (or any other non-white flour, like spelt, rye, teff, chestnut etc.)

  • ½ cup coconut flower sugar

  • 1 egg

  • ½ cup melted butter

  • Some drops of vanilla extract

For the topping:

  • 500g frozen sour cherries (or any frozen berries you like: raspberry, strawberry, blueberry…)

  • 6 sheets gelatin

  • 1 tsp chia seeds (optional)

🧑‍🍳 How to Make It

  1. Preheat oven to 175°C.

  2. Make the base: Mix all base ingredients in a bowl. Press the dough into a pie dish using your fingers and use a bit of butter or baking paper to prevent sticking. Bake for 15 minutes or until it begins to turn golden brown at the edges.

  3. Prep the topping: While the base bakes, gently defrost the cherries over low heat until they soften and release some juice (but don't overheat).

  4. Soak the gelatin sheets in cold water for 5 minutes, drain, then dissolve in a splash of hot water.

  5. Mix the cherries into the dissolved gelatin (Not the other way round!). Add chia seeds if using.

  6. Once the base is out of the oven and cooled slightly, pour the cherry mixture on top.

  7. Let it cool, then refrigerate for 2 hours or until set.

Variation 1: Instead of gelatin, you can just use a lot of chia seeds—it will create a gel-like consistency if you let it sit for half an hour.

Variation 2: Instead of cherries you can use any frozen berries your like. If the berries you are using are too sour, you can add a bit of honey in the gelatin and berry mix.
