Three Ingredient Lentil Soup
Everybody knows celery - that plant you are supposed to juice so that you look young and live forever (according to the influencers).
However, not many are familiar with how that plant looks underground.
Celery root (as in, the actual root of the celery plant), is that weird-looking, big, round thing a regular person just passes by in the supermarket because, either
1) they have no idea what it is, or
2) they may know what it is, but have no idea what to do with it.
Surprisingly, that ugly looking thing is chock full of flavour and unlike other root vegetables, has a very low glycemic index (of only 35!). Which makes it into a super duper guilt free filler for lots of recipes, including the one I share for you here.
This is that hearty, all purpose soup that you can eat for lunch, dinner and ... even breakfast (yes, you heard that right - soup for breakfast is a thing - but more on this another time)!
It will keep you full and your blood sugar stable - which means no cravings for carby foods between meals.
The ingredients in this recipe is what we use for the five of us and it lasts us for two or even three meals. We have it at any time of the day.
It also works well as a school lunch in a thermos.
